I have a confession to make, dear readers. I am a cutter. Well, not like that – but I do always cut myself while cooking. I am a great cook, but I do tend to make family members nervous when I use my knives. A friend recently told me that it is easier to cut yourself on dull knives than on sharp ones. Ummm okay. She was right though. I realized that all of my knives were old and dull (and ugly) and I was really struggling to cut things (apparently there wasn’t a struggle cutting myself – that seemed to happen easily and often!).
I cannot tell you how thrilled I was to hear that I would be reviewing a knife – not just any knife – but a knife from New West KnifeWorks. As I looked around on their website to choose my new “treasure”, I was ooohing and ahhhing for the longest time. I was looking for a Fusionwood Knife – Chopper, yet I did not realize how hard the decision would be. These are available in so many gorgeous colors. I figured knives were all boring – black and silver.
After much deliberation, I decided on the Fusion Chopper in Sunburst.
Our Fusionwood chefs knives are as functional as they are beautiful. Premium high-carbon stainless tool steel and beautiful hardwood veneer handles are fused into a technically flawless culinary instrument for professional or home chefs. The chefs knives Fine Cooking magazine called “Knife Art”.
Isn’t this gorgeous?!?

Let me tell you – I absolutely love this. It arrived in a study and handsome embossed leather sheath. I have been using this knife quite a bit, as I have been preparing recipes to post for the Fall Festival. I have not cut myself once, but I have cut everything else with ease. The handle is so comfortable, and I know that helps immensely as well.
New West KnifeWorks has other knives in addition to the Fusionwood Knives. I love the Chef Knives and the
Japanese kitchen knives with a Western flair. Our Japanese kitchen knives are made with 33 Layers of Damascus steel, precision ground and fused to a beautiful, indestructible Nobel-Lite handle.
