Roast Chicken with Potatoes

With fall upon us, it is time to pull out the dutch ovens and get that comfort food cooking! I am a big lover of dishes that I can start early in the day while I continue doing the things that I need to do.

My mom used to make a roast chicken dish frequently, which I loved. It is super easy to assemble {just throw everything in the pot!}, tastes really good and the house is filled with a yummy scent all day!

Roasted Chicken recipe, how to make roast chicken

Roast Chicken with Potatoes:

1 whole chicken (innards removed)
1 bag baby carrots
Small yellow potatoes
1 1/2 onion – cut in quarters
1 1/2 to 2 cups Cooking Sherry
Salt & pepper

In large dutch oven or roasting pan, put rinsed chicken breast side down. Add onions, baby carrots, small potatoes in pot. Sprinkle with salt and pepper and pour cooking sherry over top. Bake at 300 degrees for at least 3 hours. During cooking, baste chicken with juices from pan. Garlic bread goes great with this dish. Yummy!
