I discovered a fabulous new website today that has some amazing salsas, salad dressings, and so much more. Here is a yummy looking recipe using one of their salas – just in time for Cinco De Mayo! Fischer & Weiser Cilantro & Olive Oil Salsa sounds so good!

Fischer & Weiser Artichoke and Olive Salsa

Great salsa isn’t just limited to the South of the border – we’ve combined artichoke hearts, with tomato, olives, onion and basil and then spiced it up with some jalapeno peppers to create a medium heat salsa great for dipping, snacking or entertaining. Baked Chicken with Fischer & Wieser Cilantro & Olive Salsa

Prep Time: 15 minutes
Bake Time: 20 minutes

4 boneless, skinless chicken breasts
seasoning salt to taste
1 – 2 tablespoons olive oil
1/2 cup Fischer & Wieser Cilantro & Olive Salsa
1/2 cup shredded mozzarella cheese

Sprinkle chicken breasts with seasoning salt to taste. Heat olive oil in medium skillet; sauté chicken breasts until lightly browned on both sides. Place chicken breasts in a greased baking pan; spoon 2 tablespoons Fischer & Wieser Cilantro & Olive Salsa over each breast. Bake at
350° for 15-20 minutes or until chicken is no longer pink. Top each breast with 1-2 tablespoons cheese during the last 5 minutes of baking. 4 servings.
