A Dutch Baby, or Puffy Skillet Pancake, is a delicious pancake of sorts that is cooked in a hot skillet in the oven. The Dutch Baby can be filled with fruit and sprinkled with powdered sugar, or you can use syrup, or else you like.
Blend the eggs and milk in blender for 1 or 2 minutes. While still blending, gradually add in 1 cup of flour. Blend for 1 or 2 minutes.
Preheat oven to 350 degrees. Heat a 10 inch iron skillet with 1/2 cube butter and place in preheated oven until butter melts (watch it carefully – you don’t want the butter to burn. Once the butter has melted in the skillet, pour the Dutch Baby batter into the hot cast iron skillet and bake for 30-35 minutes. Make sure that when you put the skillet in the oven, that there is enough room for the pancake to rise.Cut into 8 pieces and serve with Dutch Honey.
The cooking time for a Dutch Baby varies, as do other recipes. Generally you cook Dutch Babies in the oven for 25-35 minutes. The Speedy Gourmet Dutch Baby recipe cooks for 30-35 minutes.
HOW TO MAKE DUTCH HONEY:
Combine 1/2 of a box of brown sugar and 1/2 – 1 pint of heavy whipping cream in a medium saucepan. Heat in pot on stove until brown sugar and whipping cream are completely blended and thick – like syrup. Keep syrup warm on the stove until Dutch Babies are ready to serve.
