A couple of nights ago, when I didn’t have anything planned for dinner, I remembered that I had shrimp defrosting in the oven. I ADORE shrimp and I also happen to adore quesadillas, so why not combine the two? I did just that and since they turned out so good, I wanted to share this really easy Sriracha Shrimp Quesadilla recipe with you!
I like using large shrimp/prawns, but you can certainly use any size you like. If you are feeding a larger group of people, you might want to use smaller shrimp, so they go a little further to feed more people.
I probably should have cut my shrimp in half lengthwise either before or after cooking, as they were really big. That is why my quesadillas look a little “taller” than normal – the shrimp inside are just large.
Ingredients:
3/4 lb. large prawns deveined, cleaned and dried thoroughly
1/3 stick butter
1/4 cup Sriracha
3/4 tsp. garlic powder
1/2 tsp. sugar
2-3 cups Mexican blend shredded cheese
Large flour tortillas
How do you make shrimp quesadillas?
Heat large skillet over medium/high heat. Add shrimp and cook just until no longer translucent. If there is liquid in bottom of skillet, pour out. Add butter, Sriracha and garlic powder and coat all shrimp evenly. Cook until lightly browned on all sides.
In another large skillet, add a few drops of vegetable oil and spread around pan. Heat a large flour tortilla in pan and add cheese on 1/2. Add 4-5 shrimp (or more if desired). As the cheese starts to melt, fold the other half of the tortilla over with a spatula. When cheese is melted all the way, remove from pan.
Slice into pieces. Top with chopped green onions, and serve with sour cream.
This is such an easy recipe, but oh my…it is SO GOOD!

Sriracha Shrimp Quesadillas
Ingredients

- Large flour tortillas

How to make Sriracha Shrimp:

How to make quesadillas:
- Soften tortillas by quickly microwaving them (10 seconds or so) right before assembling the quesadillas. In another large skillet, add a few drops of vegetable oil and spread around pan. Heat a large flour tortilla in pan and add cheese on 1/2. Add 4-5 shrimp (or more if desired). As the cheese starts to melt, fold the other half of the tortilla over with a spatula. When cheese is melted all the way, remove from pan.
How to serve quesadillas:
- Slice into pieces. Top with chopped green onions, and serve with sour cream.
