Applewood Smoked Bacon Roast Pork with Baby Potatoes

I found this beautiful cut of pork at Lunardi’s the other day. Lunardi’s is a fancy grocery store with an amazing meat counter.  They had three different types of pork roasts, and the one I chose he described as the “filet mignon” of pork.  Unfortunately I don’t remember the exact cut.

I bought some Applewood Smoked Bacon, baby red and yellow potatoes and baby carrots and decided to get busy!

I washed and put the baby potatoes on the bottom of my dutch oven and sprinkled them with garlic powder.  I used a spice mix that I won from Omaha Steaks: Urban Accents Kansas City Classic Rub {salt, brown sugar, garlic, onion, ancho powder,coriander, chipotle powder, paprika, allspice and cloves}. I rubbed that  all over the pork roast and set it on top of the potatoes.  I laid the applewood smoked bacon on top of the roast and put a few more potatoes on the sides.  I sprinkled a little more seasoning over the bacon and potatoes.

Pork Roast with baby potatoes

I put the lid on and baked at 300 degrees for about 3 hours. I opened the top and basted the contents several times. It smelled divine, and I couldn’t wait to take it out of the oven.

Now my husband and daughter aren’t crazy about pork, but they ended up having seconds, and the whole family raved about it. I have to admit, it was one of the most delicious things I have ever made. The bacon really added flavor, and the seasoning mix I used was perfect. I am going to order more.
