If you are looking for an easy side dish that feeds lots of people, you are in luck!  This Easy Corn Casserole recipe has been one of our family favorites for years, and we tend to keep these items on hand for those last minute meals.

Classic Corn Casserole recipe

This is the perfect casserole recipe for taking to a potluck. I haven’t met anyone who doesn’t like it! I love that this casserole can be served for brunch, as a vegetable dish with dinner, or even as a starch side dish with dinner. It is a really versatile corn dish, and the perfect side dish to include in holiday meals.

It is a warm, creamy casserole that is full of flavor, thanks to ingredients such as sweet corn, creamed corn, sour cream, butter, an egg, and a box of Jiffy Corn Bread Mix. It couldn’t be easier either – just mix these simple ingredients in a bowl and blend.


 

How much is in a box of Jiffy corn muffin mix?

There are 8.5 ounces of mix in a box of Jiffy Cornbread mix.

 

EASY CORN CASSEROLE:

  • 1 egg
  • 1/4 cup melted butter
  • 1 cup sour cream
  • 1 can creamed corn
  • 1 can whole kernel corn (drained)
  • 1 pkg. Jiffy cornbread mix (dry)

The reason I call it Easy Corn Casserole recipe is because it is just that – super easy! You just put all of the ingredients in a large bowl and mix all of the ingredients together. You don’t even have to mix long – just until there are no more dry parts.

Once blended, transfer corn mixture to a casserole dish (sprayed with Pam or other non-stick cooking spray). Bake at 350 degrees for 45 minutes to 1 hour (it should be light brown on top when it is done, and not super jiggy when lightly shaken).

How long does corn casserole last in the refrigerator?

Corn casserole will usually last in the refrigerator for 5-7 days if it is stored in an airtight container or double wrapped tightly in plastic wrap.

How do you reheat cornbread casserole?

If you are lucky enough to have leftover corn casserole {we rarely have any left}, I simply reheat in the microwave for about 30 seconds (depending on how much I am heating up). Now if you are want to make a corn casserole ahead of time, you can do that too by baking it a day or two ahead of time (like you normally would make it), let it cool, and then refrigerate it. When you are ready to serve it, warm it in a 300 degree oven for 10-20 minutes or until it is warm throughout. Super easy!
